Billing itself as a modern Australian eatery using fresh, seasonable and sustainably grown produce, Ultimo’s menu reads like a comfortable pair of old blue jeans: there is familiarity to such dishes as roast chicken with rosemary potatoes, mushroom risotto and Australian rib-eye steak served with a béarnaise sauce. It’s all about doing these classics, and doing them well. For a more creative take, a degustation menu available nightly except Mondays offers more experimental dishes like the basil tortellini with onsen egg, or the prosciutto-wrapped pork for a double whammy of pig, served here with slow-cooked daikon, shitake and winter melon.

I had planned to go there for the fine dining to celebrate my husband's birthday, only to find out that they have changed their concept and menu when we were already seated. Fine dining is under renovation and will open in December. They shld indicate that in their website!
